Lucky Leprechaun Pie

Sure ‘n begorrah!  It’s St. Paddy’s Day and you’ve been wearing the requisite green clothing and speaking with an Irish brogue all day. You may not be dining on corned beef and cabbage tonight, but there’s no reason not to cap the evening meal off with a slice of Lucky Leprechaun Pie. It’s so simple to make that even your little elves can help. We think St. Patrick would love this easy, dreamy pie.

You will need:

  • Box of instant Pistachio pudding, one small
  • Milk
  • Graham cracker pie crust, one ready-made
  • Cool Whip, half a tub
  • Green candy sprinkles

Here’s what to do:

Make the pudding according to the package directions for a pudding pie. Little kids can pour the milk into the pudding mix and older ones can beat the mixture with a wire whisk until smooth. Pour the pudding mix into the pie crust. Spread the Cool Whip cream over the top making small peaks with a spatula. Top it off with green sprinkles. Chill until time to serve.

Yield: One yummy pie

Note: For those watching their fat intake and counting calories, the pie can also be made by substituting skim milk for whole milk and Cool Whip lite or sugar free for regular.
