Strawberries & Cream Cake
Main Ingredients
- 4 tablespoons all-purpose flour
- 1/4 teaspoon baking powder
- 1 ½ tablespoons granulated sugar
- 2 tablespoons fat-free milk
- 2 tablespoons heavy whipping cream
- 1 large strawberry, chopped into small pieces
Additional Ingredients for Topping & Decoration, optional (serves 2)
- ½ cup heavy whipping cream
- 2 teaspoon granulated sugar
- 1 strawberry, sliced
- Confectioners’ sugar, for sprinkling
Directions
- Combine all main ingredients, except strawberry pieces, in an oversized microwave-safe mug. Mix with a small whisk until batter is smooth. Stir in strawberry chunks.
- Cook in microwave for about 1 minute. If cake is not done, heat an additional 15 seconds. Let cake cool a few minutes.
- For topping, place additional whipping cream and sugar in the mixing bowl of stand mixer (or use a handheld mixer); mix on high until peaks form. Top the cake with the whipped cream, a strawberry slice, and a sprinkling of confectioners’ sugar. Cake is best consumed while still warm or within a few hours of being cooked.
