Bird’s Nest Cookies
One of the most anticipated aspects of Spring is the fresh, bright colors seen in newly planted annuals or in the adorable designs on a little’s girl’s Easter dress. Bird’s nest cookies, made with pastel, hard-shell chocolate eggs, are another perfect, yummy way to celebrate the season. They are no-bake, easy-to-make, and a holiday treat that my son loves to help prepare.
Children of almost any age can help mix the crispy noodles and butterscotch, form the miniature “nests” on wax paper, and place a few chocolate eggs in the center. They make a great centerpiece for a Sunday family dinner or an Easter brunch.
Ingredients:
- Two cups butterscotch chips
- Two cups Chinese chow mein noodles (look in your supermarket’s ethnic aisle).
- One bag hard-shell candy- coated chocolate eggs (The seasonal Plain or Peanut M&M’s work well.)
- Line a baking sheet with waxed paper
- Place butterscotch chips in a microwave-safe container. Heat on 50% power for 1 minute. Stir, and repeat, until chips are melted.
- Stir in chow mein noodles until fully coated.
- Drop by tablespoonsful onto prepared baking sheet, forming a nest shape with your fingers.
- Place a few chocolate eggs in the center of each nest.
- Refrigerate until firm.
