Chocolate Covered Cherries
Sweets for your sweetie! If you like chocolate covered cherries, you will LOVE these. They are better than store bought and made with love! Make a batch for your Valentine.
- 1/3 cup butter, softened
- 1 (7 oz) jar marshmallow cream
- 1 tsp. almond extract
- 4 cups powdered sugar
- 60-65 maraschino cherries with stems
- 12 squares almond bark
- Beat butter until creamy. Add marshmallow cream and almond extract. Gradually add powdered sugar. The mixture will be very thick.
- Chill in freezer 10 minutes.
- Blot cherries on a paper towel, getting as much moisture off as possible.
- Pinch off a small piece of the cream mixture and roll in a small ball. Flatten and wrap around one cherry. If your hands become sticky, dust them with powdered sugar.
- Melt the chocolate over double boiler.
- Holding the cherries by the stem, dip them into the melting chocolate, allowing excess chocolate to drain off.
- Sprinkle with colored sugar, if desired, while chocolate is still melted.
- Place on lightly greased wax paper.
- Make at least one day ahead of when you plan to serve them; This allows a liquid to form inside (the best part)!
- DO NOT refrigerate. DO NOT store in sealed plastic containers. They are best stored in boxes or candy tins, something NOT airtight.
- Will keep indefinitely or as long as you can resist them.
