Ingredients
Makes: 4 to 6 servings (about 1 qt)
- 1 pint strawberries, preferably organic
- 2 medium peaches, preferably organic
- 2 to 4 tbsp pure honey (amount will depend on ripeness of fruit)
- ¾ cup peach nectar
Directions
- Halve strawberries; place in food processor or blender.
- Pit and slice peaches; add to food processor. Note: Leave skin on to maintain nutrients.
- Add 2 tbsp honey; process for 2 minutes until very smooth or near liquid consistency. If needed, add additional honey to taste.
- Pour into 2 ice cube trays and freeze at least 3 to 5 hours.
- Place frozen fruit cubes into food processor with peach nectar. Pulse 1 to 3 times in food processor or blend for just a few seconds. Purée just enough to create creamy, yet solid consistency.
- Scoop into serving dish and garnish with a fresh strawberry slice or mint leaf.
Adults-only: Add a twist! Blend in a cup of cold white wine.
