Traffic Light Smoothies
You can get even the pickiest of eaters to enjoy healthy fruits and vegetables! Already a popular trend among adults, juices, smoothies, and natural popsicles can help ensure that kids consume the recommended 5-a-day portions of fruit/veggies for essential vitamins and minerals. This recipe provides vitamin C, beta-carotene, potassium, calcium, and magnesium and will get the green light for flavor and color.
Ingredients
- 3 kiwifruits
- 2⁄3 cup tangy-flavored yogurt, such as lemon or orange
- 1 small mango
- 2 tablespoons orange or apple juice
- 1 cup raspberries
- 1–2 teaspoons honey
Directions | Makes 2 glasses
- Peel and coarsely chop the kiwifruits; then blend in a blender until smooth.
- Spoon the kiwi mixture into two tall glasses. Top each glass with a spoonful of yogurt, spreading the yogurt all the way to the sides of the glasses.
- Peel the mango and remove the pit; chop the flesh coarsely. Blend the mango to a purée with either orange or apple juice; spoon into the glasses. Top with another layer of yogurt.
- Blend the raspberries; push through a strainer over a bowl to extract the seeds. Check their sweetness; if desired, stir in a little honey. Spoon the raspberry purée into the glasses.
